Slow Cooker Mac'n Cheese
My daughter can't get enough Mac'n Cheese, so I started using this recipe instead of constantly going out and buying the box stuff. This batch makes a ton, and it freezes very well surprisingly with the noodles! It's kid friendly and adults love it too! Add any extra ingredients to it too once it's finished cooking like steamed broccoli, cooked shredded chicken or peas to add an extra healthy twist :)
Serves: 6-10
Prep: 20 mins
Cook: 2 hrs
Ingredients:
24 oz uncooked elbow macaroni
4 Tablespoons butter, cut into cubes
1 can (12 oz) Evaporated Milk
1 1/2 cups Half and Half or Milk
3 cups (12 oz) shredded sharp cheddar
8 oz Velveeta Cheese, cut into cubes
1/4 teaspoon salt
1/4 teaspoon pepper
1) Spray your slow cooker with cooking spray.
2) Cook pasta and drain.
3) Place macaroni in cooker and add butter and stir till melted.
4) Add Evaporated milk, half and half or milk, 2 1/2 cups cheese, Velveeta, salt and pepper, and stir until blended.
5) Cover and cook 1 1/2 hours on low.
6) Remove cover, stir, and add rest of shredded cheddar (1/2 cup) and return to cook for 1/2 hour more.
7) Once finished cooking, turn off slow cooker and allow to cool before placing into freezer containers. Store in fridge labeled, until it's completely cooled and store in the freezer. Enjoy!
