Roasted Butternut Squash

Ingredients:
1 Butternut squash, peeled, and chopped to 1 inch pieces
2 Tablespoon Basting Oil
salt and pepper to taste
Directions:
1) Preheat oven to 350 degrees.
2) Peel and chop butternut squash into 1 inch pieces. Place the chopped squash in a large bowl and add the basting oil and salt and pepper. Toss until all the squash is coated.
3) Line a baking sheet with aluminum foil and then place squash in an even layer on aluminum foil.
4) Roast on center rack for about an hour or until tender and browned, turning half way through.
