One Pot Mediterranean Chicken
A tasty dinner and very simple to make! If you don't have some of the ingredients on hand, I have some substitutions as well :)
Ingredients:

- 2 teaspoons olive oil
- 4 chicken breasts, cut into bite size pieces
- 3 cloves garlic, minced
- 1/2 cup onion, diced
- 3 cups chopped tomatoes, or 2 (14.5 oz) cans of un-drained diced tomatoes
- 1/2 cup white wine, or *substitute 1 Tablespoon apple cider vinegar and use 1/2 cup Italian dressing
- 2 teaspoon thyme, dried
- 1 Tablespoon basil, chopped and fresh or 1 teaspoon dried basil
- 1/4 cup parsley, chopped and fresh or 2 teaspoons dried parsley
- salt and pepper to taste
- 1/2 cup feta cheese (optional)
- 1/2 lb angel hair pasta (if you like your pasta saucy like me, add 1/2 lb or a whole lb of pasta if you like it dry.)
Directions:
- Begin boiling your water and preparing the pasta.
- Meanwhile, heat a large skillet over medium heat, add oil once hot. Add chopped chicken, salt and pepper, and saute 4-6 mins until chicken is golden. Remove from skillet and set aside.
- Saute garlic in pan drippings for 30 secs. then add onion and saute 3 mins.
- Add tomatoes and bring to a boil. Lower heat and add 1/2 cup wine ( *or your substitute ) and simmer 6 mins.
- Add thyme and basil, simmer 5 mins.
- Begin cooking your angel hair pasta for 3 mins and strain.
- Return chicken and cover on low until chicken is cooked through. Add parsley, feta and cooked pasta. Toss to coat and season with salt and pepper if needed.
