Juicy Roasted Chicken

ingredients:
1 3lb whole chicken-giblets removed
salt and pepper to taste
1 Tablespoon onion powder
1/2 cup butter, divided
1 stalk of celery, frozen is fine!
1) preheat oven to 350 degrees
2) wash, and pat dry chicken.
3) place chicken in a shallow roasting pan or Pyrex dish large enough to hold chicken.
4) season inside and out with salt and pepper, and same with the onion powder.
5) place 3 Tablespoons of butter in chicken cavity, and the rest cut up in Tablespoon amounts on the chicken, under the wings, near the drum sticks, everywhere.
6) finally, place celery inside chicken cavity.
7) bake 1hr 15 mins uncovered until inside reaches 180 degrees.
8) remove from heat and baste with drippings, cover with foil and allow to rest for 30 mins.
Note: once you are all done devouring this yummy chicken, save the carcass for future homemade chicken stock:) to do this, just take the chicken and place in a freezer bag, date, and pop in the freezer! Recipe for chicken stock is here, enjoy!
