Butternut Squash Casserole
A flavorful side dish that goes wonderfully with roasts!
Ingredients:
1 peeled butternut squash
1 cup white sugar
1 1/2 cup milk
1 teaspoon vanilla
pinch of salt
2 Tablespoon all purpose flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3 eggs
1/4 cup butter, melted
Topping:
2 cups Honey Bunches of Oats
1/4 cup butter, melted
1/4 cup brown sugar
Directions:
1) Preheat oven to 400 degrees and spray a 9'' x 13'' casserole dish with non stick cooking spray.
2) Meanwhile, cut the peeled butternut squash in half, chop off ends, scoop out the seeds and stringy stuff and put squash face down on an aluminum foil lined baking sheet at 400 degrees for 30 mins.
3) Once cooked, take out and set your oven to 425 degrees. Cut squash into pieces and puree with hand blender in a large bowl.
4) In the bowl add: white sugar, milk, vanilla, salt, flour, eggs, 1/2 cup melted butter, cinnamon, and nutmeg and mix until well blended.
5) Spread mixture into your casserole dish and bake for 45 mins or until set.
6) Mix topping ingredients in a large bowl while casserole bakes. Once set, crumble the topping evenly over the butternut squash. Return to oven to brown.
