This recipe uses simple ingredients to make a delicious meal! This recipe serves 2 people.
8 ounces small Yukon potatoes or any potatoes you have on hand, cut into about 1 inch pieces
1 1/2 Tablespoons extra virgin olive oil
1 Tablespoon Dijon mustard
1 Tablespoon minced fresh Tarragon or 1 teaspoon dried Tarragon
1 Tablespoon dry white wine
1 1/2 Tablespoon mined fresh thyme
1 teaspoon honey
2 (6 ounce) skinless chicken boneless chicken breast halves
1/4 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper, divided
1 teaspoon canola oil
Place baking pan in oven, preheat oven at 500 degrees.
Remove pan from oven once it is preheated, then coat with cooking spray and add the potatoes to the pan. Bake at 500 degrees for 10 minutes.
Combine: olive oil, mustard, tarragon, white wine, thyme, and honey in a small bowl. Set aside.
Sprinkle chicken with 1/8 teaspoon salt and 1/8 teaspoon pepper. Heat a large skillet over medium high heat. Add canola oil to pan followed by chicken. Cook 5 minutes then turn chicken over and drizzle half the mixture over chicken evenly.
Add chicken to baking sheet with potatoes and cook 10 minutes at 500 degrees. Make sure potatoes are tender and chicken is done. Drizzle remaining mixture on potatoes and sprinkle the remaining salt and pepper over potatoes. Serve immediately and enjoy!
