Marian's Quick Chicken
This is a super easy dinner to make. Just pair this chicken with some simple, delicious sides and you have yourself a flavorful, healthy dinner!
Ingredients:
- 2 chicken breasts, each butterflied
- Sea salt and cracked black pepper, to taste
- About 1/4 cup of Rice Vinegar
- 1-2 Tablespoons Extra Virgin Olive oil
- 1 Teaspoon dried Thyme
- About 1/4 cup of white wine
- Heat a cast iron skillet till hot, then add olive oil to coat.
- Butterfly the chicken breasts, then sprinkle each side with salt, pepper and thyme.
- Add chicken to the hot skillet and brown each side.
- After a few minutes on each side, slowly add the vinegar and white wine to the skillet and swirl the juices around the chicken.
- Once the liquid has been added, lower the heat and put a lid on the skillet and let the wine and vinegar cook down.
- Continue to watch the chicken and check for done-ness after a few minutes on each side. It is important to keep turning the chicken so that it becomes coated in the liquid and seasonings. Your chicken should look a bit charred and glossy once it's finished cooking.
